My aunt asked me to make a dish to bring over for Thanksgiving and the 1st thing that came to mind was twice baked mashed potatoes. I’ve wanted to make them again for a while now and I finally got my chance. I’ve made twice baked mashed potatoes before…ages ago when I was living back in my other home …NY. I love this recipe, its easy, simple and potatoes are nice and filling – you can pretty much do whatever you want with these loaded taters.
So lets begin…You will need
Sour Cream low fat
Dried Minced Onions
Adobo All Purpose Seasoning
Bacon (6-8 strips)
(use turkey bacon for a healthier alternative)
OKAY LETS GET STARTED!!!
I found a bag of small & medium russet potatoes at my local grocery store for under $2.oo
I used 14 potatoes – which will make 28 potato canoes
Rub your potatoes in olive oil (I just put a bit in my hands and rubbed the taters down)
ALSO POKE YOUR POTATOES WITH A FORK OR KNIFE – this keeps them from exploding in the oven.
Put them in the oven at 400 degrees and let them sit for about an hour or until
(you will notice the skin get a bit wrinkly and browned even more)
PUT THE BACON ON WHEN YOU PUT THE TATERS IN THE OVEN!!
Once they have cooled to the touch cut them in half-length wise
Now let the scooping begin… get that spoon ready (I used a table-spoon)
Grab a mixing bowl and start scooping!!
Leave about 1/4 of an inch of potato border in each canoe.
TIP: Use the spoon like a rake to begin and start in the center of each potato.
Mix in scooped potatoes, chives, onions, sour cream, milk, and butter
I used about a half cup of sour cream and I added the milk as I went until I reached a consistency I liked. Add about 2 table spoons of butter.
Once you have mashed and whisked your taters …….
So creamy and delicious – time to fill our canoes
Place the bacon on a paper towel to get rid of the rest of that grease
Crumble the bacon with your fingers – you can get a lot from the strips!
Sorry I thought I took a pic of the mashed potatoes scooped into the canoes …
Just spoon the mashed potatoes into each canoe, use the same table-spoon you used to gut the tatters!!
Top with bacon and chives
I waited until the next day (Thanksgiving) – since I made this at mom’s house, mom was nice enough to finish the dish for me. She topped the taters with cheddar cheese and placed them back in the oven at 350 degrees and let them bake for another 15-20 minutes. Basically just keep them in long enough till the cheese melts.
