Juicy Cinnamon & Mesquite Rub Chops – w/Rice

I don’t eat Pork often (around holidays) – but when I do I try to do something fun and mix it up a bit. I usually only eat bacon throughout the year – So, this is for all of my meat-a-sorouses (I know I just made that up) out there that don’t mind a tender, flavorful juicy chop.   This is a really quick and easy way to throw a meal together.

Lets begin …

I have all kinds of fun spices so I decided to put them to use once again.

I used a rub my mom found at a local grocery store. The spices on the front of the container; paprika, garlic, salt, onion, and other/unlabeled spices(they can’t tell all of their secrets).

Rub, Thyme, Cinnamon, Pepper, Garlic, and Oregano

Rub your meat down on both sides and place it in the fridge for about an hour …Use your stoves timer like I did!!

COVER BEFORE YOU PUT IN THE FRIDGE

Time to put those babies in the pan and cook em’ – I used my olive oil spray.

We bought rice from the local market, its Spanish rice and it is freaking yummy!! I love it because it’s flavorful, hot, budget friendly and most importantly ready to go.

Not bad for only having done half the work.
