Meatloaf Cupcakes w/ Mashed Frosting

30-45 Minute Recipe

Okay so you can make this with any protein you’d like, but similar to the Ring the Alarm Chops I wanted to spice up the ground pork. Like I said before pork isn’t really my thing but I do love bacon!! So when I create dishes now I days I want to do something fun and experiment a lot more.

This was actually Betty Crocker inspired recipe and it turned out really well. Next time I’m actually going to make the mashed taters from scratch, it’s more time-consuming but I’m sure the overall result will be even better. I may also use turkey sausage next time as a healthier alternative. This was really fun and I seriously grabbed the Betty Crocker potato packet from Family Dollar and I had the ground pork in the freezer …everything else I had at home in the cabinets.

BE SURE TO GRAB 2-3 PACKS OF THE BETTY CROCKER SIMPLE RECIPE PACKS

(this amount left me just 2 shy of  a full 2 dozen)

I like to buy my veggies from the store pre cut its actually cheaper (for me) to buy a pack for $2.41 (or less) and use it three to four times than to buy each one of these veggies separately. Yellow, red, and orange peppers are not cheap.

AN EGG

SUGAR (to taste) for sauce

Italian Bread Crumbs (or whatever you have you can always add Italian seasoning)

So, chop up your veggies, dice em up!!

Grab a bowl

Mix the paste and sauce together don’t forget to add the nutmeg & sugar. Just a bit will do, but add to taste to take away the acidity!!

Time to make some mashed potatoes, this was my first time using potatoes out of a pouch -_- … I would never, but there’s a first for everything and it wasn’t that bad.

Cheese

Pepper

Thyme (just a bit)

Minced onion (just a bit)

Oh yeah I added a bit of garlic powder

In a separate container or bowl mix below with the meat and an egg

Thyme (dried or fresh)

Cumin

Minced onion (dried)

Pepper

Sazon

Bread crumbs

NOW LETS MAKE SOME CUPCAKES!!

I just used a regular tablespoon

Now time to add the sauce – a little goes a long way!!

A spoonful will be fine

Now lets add the icing

All I did was fill a Ziploc bag with the potatoes and away I went…

Once you have your cupcakes topped place in the oven at  375 degree and bake  for about 30 minutes or until your protein is fully cooked and your icing in nice and golden.

Once your meatloaf cupcakes are fully cooked  top them with chives and enjoy!!

Best served while nice and warm.
